"The coffee is picked at optimum maturity and taken to the Beneficio to be pulped the same day. Then it is taken to a concrete pile where it is left at rest to ferment for 24 to 36 hours depending on the ambient temperature. The coffee is then washed, making up to 3 water refills, before being passed through the brokerage channel to classify and separate the floating beans. 

The coffee is moved to a patio to pre-dry for 1 day, then taken to the raised beds to dry for another 8 days, during this time the coffee is removed every hour and every afternoon."
